Mimi's Chicken Noodle Soup

This is an old family recipe and it's definitely a family favorite around here!  It's rare that we have a meal of which everyone (even the baby!) requests second helpings.

Mimi's Chicken Noodle Soup
for the noodles:
1 1/3 c all-purpose flour
2 eggs
2 tablespoons water
2 teaspoons vegetable oil
1 teaspoon salt

for the soup:
2 tablespoons olive oil or butter
2 celery ribs, sliced
2 carrots, sliced
1/2 white onion, diced
1 small baking potato, peeled and diced
2 cloves garlic, minced
4-5 sprigs fresh thyme
salt and pepper, to taste
6-8 cups chicken broth
2 chicken breasts, cooked and diced (or you can substitute a store-bought rotisserie)

For the noodles, add flour to the mixing bowl of a stand mixer.  In a small bowl, combine eggs, water, oil and salt.  Pour liquid into the flour and mix with a spoon until a dough forms.  With the bread hook attachment, "knead" the dough for about 10 minutes.  (Alternatively, you can do this with your hands if you don't have a stand mixer - I'm sure that's what Mimi did originally!)  Cover and let rest an hour.

Meanwhile to start working on the soup, place a large pot over medium-low heat and heat oil or butter. Add celery, carrots, and onion and cook 6-8 minutes, or until vegetables are softened and onion is translucent.  Add the garlic, potato, thyme, salt and pepper and cook another 30 seconds to 1 minute, or until garlic is fragrant.  Add chicken broth and let simmer while you finish working on the noodles.

After an hour, roll the dough out on a floured surface.  (If the dough keeps shrinking, let it rest another 10-20 more minutes.)  Roll dough out to about 1/8-inch thick and use a pizza cutter to slice into noodles.  Let the noodles dry out another 30 minutes.

Once the noodles have dried, add them and the chicken to the soup.  Cook another 10-20 minutes, or until the noodles are cooked through.  If the noodles are chewy, let them cook another few minutes.

Not Audrey's Crab Casserole

My husband's beloved grandmother, Audrey, passed away last April. She was one of the kindest, most loving, humble and humorous women I ever met and I feel like I am a better person for having known her. Auj made it seem as though her husband was in charge, but anyone who knew her well, knew that she truly was the backbone, and the matriarch, of the entire family. I never saw her happier than when she was holding one of her great grandchildren, and boy, did the babies love her right back! We have so many sweet and treasured pictures of Audrey and Finley!

When I first met Auj she was already in her late eighties and didn't cook much anymore. But the one dish she would cook for every family gathering was her famed crab casserole. Andrew mentioned yesterday that he'd been craving it lately. The only problem was that I didn't have a copy of her recipe and wasn't able to track one down on short notice. At first I set out to try and recreate Audrey's recipe as best I could from memory, but I quickly realized that my imitation would never live up to the real thing. So since I didn't her actual recipe in hand, I decided to make my own, totally different version of a crab casserole, aptly named Not Audrey's Crab Casserole. It was a really warm, comforting dish that we all enjoyed. After my husband took his first bite, he said, "oh my gosh, this is so good...but it's not Audrey's crab casserole." I had big shoes to fill and I tried my best! At least I knew I picked the right name for this dish :-) And it may not have been Auj's crab casserole, but he did go back for seconds...

Not Audrey's Crab Casserole

4 T butter
4 green onions, sliced
1 green bell pepper, seeded and finely chopped
2 celery ribs, finely chopped
8 oz mushrooms, finely chopped
2 cloves garlic, minced
1 1/2 t Old Bay seasoning
1/2 t Creole seasoning
1/3 c white wine
8 oz cream cheese
4 oz Colby-Jack cheese, shredded
1 lb. lump crab meat
2/3 c seasoned croutons, crushed
salt & pepper, to taste
parsley, for garnish
mashed potatoes, for serving (optional)

Preheat oven to 350 degrees.

In a large saucepan over medium heat, melt butter and add green onions, bell pepper, celery, mushrooms and garlic. Saute until vegetables are softened, about 5-7 minutes. Add Old Bay and Creole seasonings and white wine. Allow vegetables to simmer until liquid is reduced by half.

Reduce heat to low and stir in cream cheese until it has fully melted. Stir in colby-jack cheese. Taste for seasoning. Add salt and pepper, if needed. Gently fold in crab, being careful not to break up the lumps. Pour mixture into a greased casserole pan. Top with seasoned crouton crumbs.

Bake for 15 minutes, or until bubbly. Garnish with chopped parsley and serve over mashed potatoes.

Mom's French Onion Soup

I'm not sure how I've made it through 32 years of life without ever having French Onion Soup, but as you can tell from the pictures above, I loved it! I think I shied away from it because the thought of eating a bunch of onions and mushy bread just didn't appeal to me, no matter how much melted cheese was on top! But I spent the weekend at my parents' house and my mom served this for dinner one night. It was absolutely divine! This is one of those recipes where the whole is truly greater than the sum of its parts. Served with a green salad, this made the perfect dinner for a cold winter night. I can't wait to make myself. In the meantime, I got the recipe from my mom and had to share it!


Mom's French Onion Soup
serves 6 as a main course, 10-12 as a first course

3 T butter
4 c yellow sweet onions, sliced (from 3-5 onions)
1 clove garlic, minced
10 c beef broth
1 t salt
1 freshly ground black pepper
1 crusty French baguette, thinly sliced
1 lb. Swiss cheese (Emmeuthaler, Gruyere, etc.), shredded

In a large pot over medium heat, melt butter. Add onions, stir occasionally, cook until onions are soft and a light golden brown. Stir in the garlic and cook 30 seconds more. Add broth, salt and pepper. Bring to a boil and cook 30 minutes.

Meanwhile, preheat oven to 400 degrees. Arrange six soup bowls on a cookie sheet. Place 4-5 slices of bread in the bottom of each bowl. Fill bowls halfway with soup. Continue ladling in soup slowly until each bowl is evenly filled. Sprinkle cheese on top, without pushing cheese into the liquid. Gently press cheese all around the edges of the bowl, so that when the cheese melts, it forms a crust. Bake for 35 minutes. Serve with remaining bread slices and a green salad.
