Once a Month Cooking

Does anyone do this? I'm trying to figure out if I can swing it. I think we'd eat out less often (and thus save money) if I had meals in the freezer ready to cook. I literally spent four hours yesterday trying to plan out a menu and collect recipes and I'm still not finished. Anyone have any advice for me???

I, too, want to try once-a-month cooking again. I used to do it before kids when I was working. I'd just pick a Sunday and spend the whole day making meals to freeze. It was easy and wonderful. I made enough for 4 meals per week (so 16 per month), and we'd have leftovers the rest of the time except Friday nights when we used to go out.
Right now I'm finding it too hard to plan so far ahead. But I am doing something that's been very helpful. I just double almost all of our recipes, then immediately freeze half. It doesn't take any more time to make twice as much usually. I freeze pulled pork, shredded chicken, soups, casseroles, pasta dishes, etc. I also have a handful of things that are ready to stick in the crock pot. I just pull the bag out the night before and thaw it in the refrigerator overnight. Then I dump the contents into the crock pot in the morning. Quick and easy!
