Honey-Glazed Roasted Carrots and Parsnips

Parsnips may be my new favorite vegetable! This dish was simply devine and so easy to make. I quartered the recipe since it was just for Andrew and me but I really wish I'd made more because it was that good. I will make this recipe again - and soon!
